Vanilla

The most familiar scent on earth, and the one most likely to be a lie.

Everyone has smelled vanilla. Almost no one has smelled the real thing. The word names the most familiar scent in the world, the one folded into childhood, into milk and sugar and the inside of a birthday, and yet the material behind it is among the rarest and most laborious in all of perfumery. It is the fruit of an orchid that cannot pollinate itself, married by hand one flower at a time in a single morning, then left for the better part of a year to rot, slowly and on purpose, until a smell that was not there when it was picked finally arrives. Like orris, vanilla is not harvested. It is made, out of labour and out of time.

First, the plant

An orchid that cannot reproduce alone.

Vanilla is an orchid, the only one among some thirty thousand species that the world grows to eat or to smell. It is not a fragile thing on a windowsill but a muscular tropical vine, a liana that hauls itself up trees by aerial roots and can run for tens of metres. It is native to the lowland forests of eastern Mexico, where the Totonac people cultivated it long before the Aztecs took it in tribute, ground it into their cacao, and called it tlilxochitl, the black flower.

Its flower opens for less than a day. In the wild it is pollinated by a particular kind of bee, and perhaps the odd hummingbird, found nowhere outside Mexico. This is the catch that shaped the whole history of the plant. For three centuries after the Spanish carried it across the oceans, the vine flowered in every hot colony on earth and fruited in none of them. It grew beautifully and gave nothing.

The name is smaller than the plant. Vanilla is the Spanish vainilla, a little sheath, the diminutive of vaina, a pod or scabbard, from the Latin vagina. The most storied flavour on earth is named, modestly, after the shape of its pod.
The boy who unlocked the world

Edmond Albius, 1841.

The lock was picked by a child. In 1841, on the French island of Bourbon, now Réunion, a twelve-year-old enslaved boy named Edmond Albius worked out how to marry the flower to itself by hand. The method is almost absurdly simple: lift the rostellum, the small flap that keeps an orchid from pollinating itself, with a sliver of bamboo, and press the anther against the stigma with the thumb. The whole gesture takes a few seconds. It is still, nearly two centuries later, exactly how every vanilla flower on earth is pollinated.

A Belgian botanist, Charles Morren, had managed it in a greenhouse five years earlier, but his way was slow and useless in a field. The boy's was fast, and it could be taught to a line of workers walking the vines at first light, racing the flowers that close by mid-morning. Within a few decades Réunion and then Madagascar had overtaken Mexico itself. Albius was freed at abolition in 1848, saw his discovery claimed by men who wanted the credit, and died poor in 1880. The technique never got a better one.

Nine months, then the longer wait

The pod that has to be taught to smell.

A pollinated flower takes the better part of a year, eight or nine months, to swell into a long green pod. And here is the part vanilla shares with orris, the part nobody expects: the green pod has almost no smell. Slice one open and there is grassy, vegetal nothing. The vanillin is present but locked, bound to a sugar as a molecule called glucovanillin, scentless and inert. It has to be set loose, and setting it loose is the second labour, longer than the first.

The cure has four movements. The pods are killed, scalded in hot water or wilted in the sun to stop their growth and break their cells. Then sweated, wrapped warm for days so the enzymes wake. Then dried slowly over weeks. Then conditioned, rested in closed boxes for months while the aroma deepens and rounds. It is during this slow, deliberate decay that an enzyme, beta-glucosidase, cleaves the sugar away and frees the vanillin, while two hundred and fifty or more other compounds form alongside it. The best beans emerge supple and almost black, frosted with givre, a bloom of crystallised vanillin standing on the skin like sugar on a fig.

The molecule and its court

Vanillin is the king. Vanilla is the kingdom.

One molecule does most of the talking. Vanillin, four-hydroxy-three-methoxybenzaldehyde, makes up one to two percent of a cured bean and carries the note everyone recognises. But what separates real vanilla from the smell of a cheap candle is the court around the king: somewhere between two and five hundred minor compounds, p-hydroxybenzaldehyde, guaiacol, vanillic and anisic notes, faint touches of smoke and rum and prune, that give the natural material its shadow and its warmth. Vanillin on its own smells like vanillin. Vanilla smells like a place.

Why it costs what it costs, and then suddenly does not

The most volatile price in the spice drawer.

Three labours stack on one another: a vine that fruits once a year, every flower pollinated by hand, every pod cured for months. Madagascar grows roughly four fifths of the world's natural vanilla, in the SAVA region in its northeast. Indonesia, this house's own neighbourhood, is the second largest grower, much of it sold green for extraction abroad.

Because the supply is thin and slow, and the crop sits ripening in the open for the better part of a year, the price moves like almost nothing else in the kitchen. After a cyclone tore across Madagascar in 2017, cured beans climbed toward and past five and six hundred dollars a kilo, by some accounts worth more than silver by weight, and farmers began stamping their initials into green pods and guarding the vines at night against thieves. Then it fell, as it always falls. Vanilla is the only flavour traded with the nerves of a precious metal.

The honest part

Almost none of it is real.

Here is the truth the cupcake does not advertise. The overwhelming majority of the world's vanilla flavour has never been near an orchid. By the usual estimate, fewer than one note in a hundred comes from the bean. The rest is vanillin, the single molecule, made in a factory, and it is made from almost anything that holds the right carbon skeleton.

The first synthesis came in 1874, when Ferdinand Tiemann and Wilhelm Haarmann pulled vanillin from coniferin, a compound in the sap of conifers, and founded one of the houses that still flavour the world. Soon it was made from eugenol, the molecule that gives clove its heat. For much of the twentieth century it was a gift of the paper industry, drawn from lignin, the glue that holds wood together, as a by-product of turning trees into pulp, so that for years a single mill could perfume a continent. Today most of it starts as guaiacol, taken from petroleum, the cheapest road of all. And the newest vanillin is grown, fermented by microbes from ferulic acid in rice bran, then sold, quite legally, as natural.

As for the stubborn rumour that your vanilla is flavoured with castoreum, the secretion from a beaver's glands: it is very nearly a myth. Castoreum does carry a warm, leathery, vanilla-adjacent note, and it was used, in tiny amounts, a long time ago. The world now consumes only a few hundred kilograms of it a year at most, almost none of it in food. Your ice cream is petrochemical, not beaver.

None of this is shameful. It is how vanilla became cheap enough to be everywhere. But it is worth knowing that the words natural flavour on a label can mean a molecule fermented out of bran, and that the distance between vanillin and vanilla is the distance between a single note and a chord.

Whole beans split and steeped in alcohol for months, the way it has always been done. A living larder a perfumer keeps and feeds, against the synthetics: vanillin, and ethylvanillin, three to four times stronger, creamier, and not found anywhere in nature.

Where it lives

The floor that half of perfumery stands on.

In 1925 Jacques Guerlain finished Shalimar by pouring an overdose of ethylvanillin, vanillin's stronger laboratory cousin, into a base of bergamot and leather, and made the most famous oriental ever composed. Vanilla is the warm thread under the Guerlinade, the base of the amber and the oriental, the soft landing of a thousand fragrances. In 1992 it became a genre of its own, when Angel invented the gourmand, the perfume that smells frankly of dessert, and an entire aisle followed.

It reads as comfort, as clean skin, as milk and tobacco and old books and the inside of a childhood. Which is exactly what makes it so easy to do badly, and so moving when it is done with restraint.

On skin

Not the cupcake.

Real vanilla absolute is a shock to anyone expecting the candle. It is dark. It is boozy and balsamic, with the smell of rum and prune and pipe tobacco, a leathery, almost animal underside and a curl of smoke. It is sweet the way an old liqueur is sweet, not the way sugar is. The cheap synthetic smells of the idea of vanilla, flat and bright and faintly plastic. The real material smells of the bean, the decay, the months in the box. It has a body.

Vanilla is not a simple smell. It is a smell we learned before we had words, which is a different thing.
The house's reason

A note made entirely of time.

There is a reason vanilla is the most beloved smell on earth and also the most condescended to. It is the scent of safety, of the mother's kitchen, of being small and warm and looked after, and we tend to mistrust whatever comforts us. But consider what it actually is. A flower that opens for a single morning and cannot set seed without a human hand. A green pod with no smell at all, taught to smell by months of intended decay. A note, in the end, made of patience and of time, exactly like the orris in the next drawer. For a house that believes a fragrance is memory before it is anything else, there may be no more honest material in the whole cabinet, and certainly none that carries more of us folded inside it.
